** I get the Vegetable Pancake Mix from the Korean Store. It is seasoned nicely and is perfect for making savory pancakes in a rush.

Tofu Patty Sandwich

Tofu Patty Sandwich - A slice of bread with Tofu Patty* and a slice of cheese and ketchup.

*Tofu Patty - Made this with Extra Firm Tofu, boiled potato and Tofu burger mix ( Found this at the Asian market, it mainly has Panko which is a Japanese style bread crumbs and seasoning). Will not be using the burger mix next time and will try it with Panko and seasoning.

How did it do?

She did not eat the sandwich at school, reason...there was not enough ketchup (Patience be with me! )
But finished it at home after we added more ketchup!

Pasta with Arrabiata Sauce

Pasta with Arrabiata Sauce ( Whole Wheat Rotini Pasta sauteed with butter and store bought Arrabiata Sauce and sprinkled with Parmesan Cheese)

Lunch Box

I packed the pasta in a Thermos jar as it keeps it warm by lunch time. I think it is one of the best things I found especially for the winter months. Food packed hot in the morning remains warm by around noon and also helps food like pasta to retain its moisture. So I highly recommend this jar.

How did it do?

Did good, I had packed too much pasta so she got back some. Just have to send lesser.

Empty again! (I got out the secret from her last night about how suddenly she is finishing the whole lunch....the PE teacher has been walking around the cafeteria encouraging the kids to eat their fruits and veggies!)
